Cherry brandy from Beira Baixa
Is a distilled beverage traditionally produced in the Cova da Beira region, especially in the municipality of Fundão, known for the quality of its cherries. This brandy is obtained from the controlled fermentation of the best local cherries, which are then distilled in a traditional copper still, resulting in a colorless, clear drink with a fruity cherry aroma and flavor and almond notes.
Main characteristics:
Raw material: selected cherries from the Gardunha and Cova da Beira region.
Process: fermentation of cherries followed by distillation in a copper still.
Alcohol content: generally high, for example, 48.5% vol. in Kirsch brandy from Fundão.
Sensory profile: fine and delicate aroma of cherries, with notes of fresh crushed almond; smooth and fruity flavor.
Consumption: can be enjoyed as an aperitif or digestive, served at room temperature or slightly chilled, and traditionally accompanied by coffee.
Beira Baixa cherry brandy also stands out for having won international awards and for preserving artisanal production methods, valuing the regional product and the Beira tradition. It is common to find versions sold in 50cl packages, often accompanied by glasses for tasting.
This brandy is known internationally by the name Kirsch (from the German Kirschwasser), but Portuguese production stands out for the exclusive use of cherries from Beira Baixa, giving it unique characteristics and its own identity.
